Who can resist the smell of bread baking in the oven? If you’re like us, you can’t wait to get your hands on slices of soft warm bread. Whether making the perfect sandwich, dunking a hunk of bread in a piping hot bowl of soup, or toasting slices to golden perfection and topping them with pats of butter, we love beautiful breads, but we hate waiting hours for the perfect loaf. Thankfully, there are quick breads to satisfy our appetites and impatience.

Quick breads are savory and sweet breads like biscuits, muffins, and scones that can be made in about an hour or less because the dough is not leavened, or puffed up, with yeast, which can take hours to rise. Instead, these breads are leavened with baking soda or baking powder. These batters can go straight from the mixing bowl to the oven, yielding yeast-free bread in minutes.

What is Quick Bread?

Quick bread is savory or sweet bread that is leavened with baking soda or baking powder instead of yeast. Like the name implies, these yeast-free breads are quick to make because you don’t have to proof or knead the dough or wait for the dough to rise.

Depending on the type of quick bread, these simple breads are baked in loaf pans, cast iron skillets, or sheet pans.

What Bread is Not a Quick Bread?

Unleavened bread, such as matzo, roti, or tortillas, is not a quick bread. Cake is, technically, a  quick bread, but cake is always sweet while quick breads can be sweet or savory. Cakes are also typically frosted and/or decorated whereas some quick breads that are sweet are not necessarily frosted or decorated.

What are Examples of Quick Breads?

There are many examples of quick breads, including:

  • Biscuits: Round or square buttery, flaky leavened bread made with buttermilk. If you’re in the United Kingdom, biscuits are a crisp cookie.
  • Muffins: Denser than a cupcake, muffins are round, single serving breads with a domed top.
  • Scones: Denser than a biscuit, scones are a round or triangular bread made with flour, eggs and/or heavy cream, and sugar plus baking powder or baking soda.
  • Loafs: Loaf-shaped savory or sweet breads that are often served by the slice.
  • Pound cake: Loaf-shaped cake that is denser than regular cake. Pound cake contains a lot of fat and is made of 1 lb. each of butter, eggs, flour, and sugar.
  • Pancakes: Round, flat, thin cakes that are fried in a pan or on a griddle. They are often served with butter and maple syrup, but they may also be topped with ice cream, hazelnut spread, and fruit.
  • Waffles: Leavened cake batter or dough that is cooked in a hinged, patterned metal griddle. Waffles are often served with butter and maple syrup, but may also be topped with ice cream, hazelnut spread, and fruit.
  • Cornbread: Sweet bread made with a batter that contains cornmeal and sugar.
  • Popovers: An American version of Yorkshire pudding, popovers are large and airy rolls made with egg batter, They get their name from the batter that “pops” over the muffin tin or pan they are baked in.
  • Cinnamon rolls: A sweet bread made of a dough of butter, cinnamon, flour, and sugar that is rolled into a pinwheel. Cinnamon rolls are often topped with glaze, vanilla icing, or cream cheese frosting.
  • Shortcake: A crumbly cake made with butter. Shortcake is similar in texture to a biscuit or scone.
  • Soda bread: Bread that is leavened with baking soda, a fine white powder consisting of sodium bicarbonate.
  • Scuffins: A dense, muffin-shaped scone with a crumbly texture. Scruffins typically have fruity preserves at the center.
  • Welsh Cake: A hybrid of a scone, biscuit, and pancake.
